中國人的飲食文化獨樹一幟，有所謂「民以食為天」，這種對「食」的重視，延伸至鬼界亦然。吃在大江南北不算老饕，吃在黃泉幽都才是高人。從人剛死而生者要行的「解慰酒」「纓紅宴」等特別飲宴形式；到回魂夜供養新魂的「回魂套餐」；至七月鬼節街頭巷尾「燒街衣」時奉祀鬼魂的一應食用等等，都顯示了「飲食文化」不單適用於人，也是活的人對死後世界有無限的幻想、畏懼甚或未知的一點嚮往，於是衍生了各式各樣「鬼飲食」的習俗。
那麼追源溯流，這些習俗和由來為何？形式若何？多年下來又經過怎樣的發展？有哪些改變？有哪些我們現在視作理所當然，但知其然不知其所以然的風俗，其實是各種天大的誤解？這些問題背後，都與文化、心理、歷史因素及社會現狀有關。
